Omelettes are easy to make, taste delicious and will fill you up without spiking blood sugar. Leaving you feeling ready to face the days challenges.
Make a note of how you feel midmorning and later in the day after an omelette breakfast. Then make a note the next time you eat pastries, white toast and jam or packet cereals.

Ingredients:
2 Eggs
Fillings such as salmon / cheese
1 tbsp of olive or coconut oil
Handful of spinach
1 tbsp Chopped chives or favourite herbs
Method:
Heat 1 tbsp of olive or coconut oil in a pan on medium heat. Whisk eggs with 2 tbsp of water or milk and then pour into a pan and cover until almost set. Add remaining ingredients, fold over and simmer for 2 minutes. You can use mushrooms, ham, cheese, bacon or tomato for a bit of variety
